Easy as Pie

I’m no Betty Crocker, though this marvelous family recipe had people thinking otherwise!
HERE’S HOW: Makes 10″ round
Dough: 1 tsp salt 1 TBL sugar 1 cup shortening 2 1/3 cup flour 1/2 tsp nutmeg 1/2 cup ice cold water (potentially less)
Add salt, sugar and nutmeg to flour. Cut in shortening. Add water little by little, until Play-Doh-like consistency. Let sit for 10 minutes. Cut dough in half.

Filling: 10 plus apples (sweet and crisp, such as honey crisp or mackintosh) 2 cups sugar 1/2 cup flour (more or less) 1/2 lemon 2 TBL butter Cinnamon Nutmeg Allspice
Peel and slice the apples. Squeeze lemon juice, and add sugar. Thicken with flour and add spices to taste. Rule of thumb: add spices little by little, in descending order of quantity. Meaning, add the most cinnamon and the least amount of allspice.

Roll out first half of dough and place in pie pan. Pour apple mix into dish and top with blobs of butter. Roll the second dough ball and place on top of apple mix. Pinch the sides shut and gently punch breathing holes in top with a butter knife.
Bake at 375 degrees for 40 minutes.
Words to the wise: working with quality ingredients (whole grain, organic, unadulterated) ensures a quality product. If nothing else, I strongly encourage you to spend extra on organic apples and non-hydrogenated shortening.
