  1. 1 cup dried chickpeas (canned will do as well, though the consistency will be thinner)

  2. 4 cups water (if using dried chickpeas)

  3. 1 red bell pepper

  4. 1 cup fresh spinach

  5. 2 cloves fresh garlic

  6. 1 fresh jalapeño pepper

  7. 2 Tbsp pesto

  8. 1 tsp.+- Himalayan sea salt

  9. 2 Tbsp olive oil

Instant Pot Chickpeas

  1. Optional step: soak chickpeas overnight or for about 8 hours (soaking makes them easier to digest)

Roasted Peppers

  5. Pull peppers from oven and set aside to cool.

  6. When cool enough to touch, peel and seed peppers.

  1. Place peppers in blender with remaining ingredients (excluding salt).

  2. Season with salt to taste.
